| Tasting Notes: | A candelabra is a fallen redwood tree that sends new shoots upward and continues to grow and preserve its heritage for generations. Candelabra is a terroir driven wine. We target specific sections of each clone and groom the vines to enhance their own character, which when brought together produce a symphony of aromas, flavors, and sensations. |
| Production Notes: | Handpicked in the cool early morning into half ton bins to preserve the delicate fruit. Hand-sorted and then destemmed directly into 1 ton fermentors with 50% whole berries, adding 10% whole cluster to each bin. Cold soaked for 48 hours with all hand delivered punchdowns. All this to preserve the elderberry and tart cherry fruit in the nose and the cherry cola and velvety rich fruit in the palate, which are followed by ripe figs in the finish. |
